It is finally feeling like fall here in Oklahoma and I could not be happier! One of my favorite things about cooler weather is having the excuse to make soup all the time. I LOVE soup. One of my go-to recipes is this roasted butternut squash soup. I started making it years ago and it is one of our favorites! The best part, super easy and cheap! This recipe can also be easily made vegetarian (use veggie stock instead of chicken stock) or vegan (use dairy free yogurt). And it freezes well, so double that recipe and your future self will thank you ;-) Enjoy!
