Few things scream "comfort food" quite like a big bowl of gnocchi. Add some mushrooms, thyme, and goat cheese, and your bowl of comfort food just got all fancied up! The word may be a little difficult to say (nyo-key), but these little potato dumplings will have you begging for more. Baxter called me while on the road home from Louisiana and said he was craving gnocchi. I haven't made a gnocchi dish in forever, so I was excited to come up with something delicious to welcome him home! I have made them from scratch before, totally doable, but I didn't want to be in the kitchen all night so I opted for the store-bought version. I served the gnocchi alongside seared steaks and a glass of Cabernet. The best part of this meal? It took me about 20 minutes start to finish.
