Cookie Dough Brownies


[I would like to preface this post with, have you ever read "If You Give A Mouse a Cookie"? If you haven't, it is about a boy who gives a mouse a cookie, then he wants milk, then a straw, and he keeps wanting more and more. Well, in this story, Rosie is the mouse. When she was little, I gave her a cookie, and just like her mama, that sweet-tooth gene is strong! So when she smelled sugar in the air, there was no getting her out of the kitchen for this post, so we just rolled with it.]

What could be better than two of the best desserts smushed into one? Pretty much nothing. I went the easy route on the brownies and followed the directions for the "fudgy brownie" on a box of brownie mix. If Betty Crocker has mastered it, who am I to try and one-up her? Once the brownies have cooked and cooled, top with a layer of the egg-free cookie dough. Chill the whole thing for at least an hour, or if you are impatient like me, pop that bad boy in the freezer for about 15 minutes and dig in!

Recipe for egg-free cookie dough:

  • 1/4 cup butter, softened

  • 1/4 cup white sugar

  • 1/4 cup brown sugar

  • 1 teaspoon vanilla extract

  • 3 tablespoons milk

  • 1 cup all-purpose flour

  • 1/2 teaspoon salt

  • 1/2 cup chocolate chips

Directions:

  1. Mix together white sugar, brown sugar, salt, and softened butter until smooth

  2. Whisk in milk and vanilla extract

  3. Mix in the flour until all ingredients are well blended

  4. Stir in chocolate chips
