Who doesn't love a little bubbly? I don't think it is possible to be in a bad mood after you hear a cork pop! Before we dive into the awesomeness that is the Sauvage, I want to throw down a little knowledge on sparkling wine.
1. Champagne vs. sparkling wine Before you hop on the "Champagne Campaign," are you really popping champs? In order to call it Champagne, it must come from Champagne, France. Everything else is considered sparkling wine. Of course there are other categories of sparkling wine, such as Prosecco and Cava, but just to be on the safe side, let's just call it sparkling wine.
2. Blanc de what? Traditionally, Champagne can be made from three different grape varietals: Pinot Noir, Pinot Meunier, or Chardonnay. If the wine is made from 100% Chardonnay, it is referred to as "blanc de blancs" or "white of whites."
3. Poppin' Bottles Ok, some occasions call for a little drama. If that is the case, you pop that bottle! If you are enjoying a nice sparkling, the quieter the better. Properly opening a bottle of sparkling can take some practice. The task is even part of the certified sommelier exam. It is important to apply pressure while wiggling the cork out. Take control of the bottle and take your time. Your goal is to keep all the bubbles in the bottle and to make no more than a quiet hiss.
Back to the Sauvage. This is a great example of affordable, American sparkling wine. Crisp, bone-dry, and delicate. Notes of citrus, bright mineral, and green apple. This would be perfect alongside fresh oysters or sushi. But if you are like me, sparkling wine is just fine all on its own.
