Move Over Chipotle! At-Home Burrito Bowl


When you get to be on a first name basis with the Chipotle staff, it might be time to reevaluate some life decisions. There is one a block from my house, so on hardcore study nights it often seems like the only logical choice on where to eat. And it is just SO good.

Funny story...last time I went to Chipotle, I was with my friend Molly and she spotted a Hanson brother (she has the best luck). This totally shows my age, but y'all, I was OBSESSED in grade school. So here we are, standing in line, two people behind Taylor Hanson. Molly goes to take a discreet snapchat, and BAM! Camera shutter goes off. Ha! Can't a guy just get a burrito in peace? Nope! Sorry, Taylor.

Ok, so now that you know about my love for Chipotle and Hanson, let's talk about how to make a burrito bowl at home! I am super happy with how this turned out...literally tastes exactly like the real deal.

I started off by making the chicken. I just used diced, boneless, skinless chicken thighs (cheaper and juicier than breasts). I heated a couple tablespoons of olive oil in a pan and added the chicken. Once the chicken is cooked through, I added a packet of taco seasoning and the amount of water on the packet directions. Super easy!

Next up, we have the onions and peppers. I sliced two bell peppers and one onion and added them to a hot pan with 2 tablespoons of olive oil. Cook until tender.

The rice...the most important part of the burrito bowl! I really love using Basmati rice, so that is what I used here, but really any kind would work. Follow the directions on the box for the rice you are using. Once the rice is cooked, add the juice of one lime, a full handful of chopped cilantro, and 2 tablespoons of butter. Stir it up and now you are ready to start building your bowl!

I started with rice as my base, then added black beans (right from the can), chicken, peppers and onions, guacamole, plain Greek yogurt, pico de gallo, and cheese. YUM!! The best part was that there were tons of left overs so I could eat my burrito bowls for the rest of the week without any awkward fan girl moments ;-)
