Early Morning Acai Bowl

I am the absolute worst about eating breakfast. I am an early riser (see post), usually setting my alarm for 5:00-ish, and I am just never hungry that early. I always regret the decision not to eat breakfast as soon as I get to school when my stomach growls all through lecture...just ask the people who sit next to me. Ha! I have been trying to get better about nourishing my body first thing in the morning, so I have been pinning healthy and easy breakfast ideas like crazy. I have always loved smoothies, so these acai bowls looked amazing! It is like a big bowl of healthy ice cream for breakfast. YES PLEASE! I have already made it multiple times this week, and once you have all the fruit cut up and ready to go for the week, it only takes minutes to make a breakfast that is sooo good!
Before making the smoothie part of the bowl (probably not the proper term, but let's call a spade a spade, it is a smoothie in a bowl), I prepped the toppings. Like I just mentioned, you can do this ahead of time and just keep the fruit in tupperware in the fridge to make your early mornings easier. You can top these bowls with anything! I have even seen some people put peanut butter and nutella in their bowls too! I will never say no to adding nutella to something!


For the smoothie part, I kept it simple---- four ingredients. About 1 cup of unsweetened vanilla almond milk, one frozen banana, a handful of frozen strawberries, and two teaspoons of acai powder. Blend it all up and pour it into the bowl. Or just put it in a cup and drink it ;-) It is so good just like this!


Now the fun part! They always say you eat with your eyes first, so make it pretty! I added pineapple, kiwi, banana, pomegranate seeds, and a seed blend for some crunch.
